Spiced up Baked Beans

Grumpy's take on this spicy popular side dish either smoked or baked in the oven. I prefer to use the smoker for that awesome smoked flavor.

Ingredients
  

  • 10 slices Bacon cut into 1/2 inch pieces
  • 1 large red onion finely diced
  • 3 large Jalapeno 2 finely diced 1 sliced
  • 54 oz Pinto beans cooked and drained
  • 4 tbsp Grumpy Spicy BBQ sauce or equivalent
  • 1/4 cup molasses
  • 2/3 cup Brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tsp dried mustard
  • 1 tsp cayenne
  • salt and pepper to taste

Instructions
 

  • Preheat oven o 325 degrees F and adjust oven rack to the lower-middle position. Spray a 13x9 baking dish with non-stick spray and set aside.
    To a large, deep skillet, heat bacon pieces over MED heat until cooked about halfway through.  Remove to a paper towel lined plate, leaving grease in the skillet.
    To same skillet with the bacon grease, add onion and jalapeño and saute about 5 minutes, until softened. Add all remaining ingredients and stir to combine well.  Let mixture cook for a minute or so to combine the flavors.
    Carefully pour beans into prepared baking dish and lay cooked bacon pieces on top of the beans. Bake for 1 hour or smoke for 2 hours, until bubbly and thickened to your liking. 
    Let beans stand 5 minutes or so before serving.
    Garnish with jalapeño slices.
